These pickled onions and quick to make, and can be made with so many variations. You can try different spices, different herbs and even different pickling liquids. I will mention a few various below. check them out.
Total time – 5 mins + 1 hour
Thinly sliced onions 2 medium onions
White vinegar 3 tablespoons
Water- 150 ml
Coarsely crushed peppercorns 1 teaspoon
Salt- 1 teaspoon
Smashed garlic – 1 clove
Coriander- 3 stalks
Mix everything together and leave it in the refrigerator for about an hour till the colour changes to a deeper pink.
- Instead of coriander, you can add mint which adds great freshness.
- You can also add bay leaves, dry chillies or cloves, for that additional spice punch.
- You can also add thinly sliced carrots, cucumbers, tiny cauliflower florets etc to pickling liquid, although you might have to keep it longer to pickle.
- Adding a slice of beetroot deepens the colour and gives vegetables a pink hue.
