Veg Tikka Pizza

First thing is first, Get those vegetables marinating. If you want to use meat, please do. You might have to marinate them longer. I used vegetables. So I only marinated them for an hour. For vegetables, I used onions, corn, mushrooms, Paneer and Capsicum. The marinade was simple with hung curd and tandoori spice mix.

Next, for the tikka sauce, Puree some garlic, onion, tomatoes and cashews. Pour it in a saucepan and let it cook away with the lid on for 25 minutes on low flame till it reaches a thick, almost paste-like consistency. Last, add in the leftover marinade and let it cook for another 10 minutes without the lid.

Assemble all the ingredients, stretch the dough to form a thin base for the pizza, poke a few holes to prevent it from going soggy, add the sauce, followed by the toppings and bake for 35 minutes. Add the cheese, and finally bake for another 10 minutes.

 

Recipe:

Pizza dough-
1 batch of my multigrain pizza dough

Marinade-
Hung curd/ Yogurt- 1/2 cup
Tandoori masala  – 3 tablespoons

Vegetables-
Any vegetables of your choice- 1 cup

Sauce-
Onion- 1, meduim, roughly chopped
Tomato- 1, medium, roughly chopped
Garlic- 10 cloves
Cashews- 10- 12
Tandoori Marinade- 2 teaspoons

For the marinade, Mix together the curd and the tandoori marinade. Add the vegetables, all together or separately and set it aside.

For the tikka sauce, Puree some garlic, onion, tomatoes and cashews. Pour it in a saucepan and let it cook away with the lid on for 25 minutes on low flame till it reaches a thick, almost paste-like consistency. Last, add in the leftover marinade and let it cook for another 10 minutes without the lid.

Assemble all the ingredients, stretch the dough to form a thin base for the pizza, poke a few holes to prevent it from going soggy. Add a thick layer of the sauce, followed by a single layer of the toppings and bake for 35 minutes in a preheated oven at 200 degrees. Add a thick layer of the grated cheese, and finally bake for another 10 minutes.
