Buttercream is basically three ingredients- Sugar, butter and a liquid- milk or heavy cream. And then there are flavourings like vanilla and cocoa. But what makes a buttercream are the three ingredients. If the proportion of butter and powdered sugar is not right, the buttercream ends up being pasty or too sweet or too runny or even too oily in the mouth. Here is my go-to recipe for buttercream. My recipe is ultra light and has the right amount of butter to sugar. All you have to do is mix the ingredients and whip till you get a fluffy and light cloud-like frosting.
Butter- 150 Grams
Icing sugar- 3 Cups
Heavy cream- 4 Tablespoons
Vanilla extract- 1 Teaspoon
For chocolate buttercream-
Cocoa powder- 1/4 Cup plus 2 Tablespoon
Additional heavy cream- 1 tablespoon
Add everything to a mixing bowl. Mix with a spatula. With the help of an electric mixer or a stand mixer, whip until you get a creamy light mixture, about 6 minutes in a stand mixer (8-9 minutes with electric hand mixer).
Note- If you are making chocolate buttercream, you can alter the cocoa powder to your liking. Adding the above-mentioned quantity of cocoa powder will give you a rich chocolate buttercream with a slightly bitter cocoa flavour which is how I like it. If you are altering the cocoa powder quantity, add the heavy cream only if needed.
