Almond Praline

This is a great accompaniment for desserts that need a crunch element. It can be used as a topping for puddings, Panna Cottas or a filling for Ice creams, or even mix it in the base for tarts and Cheesecakes. It’s also a great snack to eat as it is.

In a saucepan, add the almonds and roast for 5 minutes on medium flame, stirring constantly. Once the almonds start roasting, add the sugar, reduce the flame to low and let it melt to make a caramel coating the almonds. Do not stir at any point once the sugar is added. Keep the flame very low so that the sugar heats and melts evenly.

Once the sugar melts and turns into a medium- dark amber colour, transfer to a greased pan and let it cool. It will harden once cooled. You can bread it into pieces or crush the pieces to a coarse powder and use it in plenty of desserts like a topping or a base.
