Chicken Souvlaki is not as complicated as it sounds at all. I was first a little intimidated by the name. But this dish is Yum! and so simple. Its a great recipe for beginners in chicken. You could also switch the proteins to other meats easily.
It has a very simple marinade. It helps tenderize the chicken beautifully. It is also very simply fried over a grill. or pan fried. You could bake it in the oven too. The Kebabs are juicy and tender because of the marinade keeps it super tender and it’s cooked on really high heat for a short amount of time. They’re great to eat as they are. They are amazing in Pitas with some tzatziki and vegetables. They’re also good in salads.
For the chicken, In a bowl, add all the ingredients for the marinade. Add the skewers chicken and mix well. Cover with a plastic wrap and refrigerate for an hour or up to 12 hours.
Heat a grill pan. When it gets really hot, add the chicken skewers and grill for 1-2 minutes on each side, till there it turns a brown colour.
Total time- 1 Hour 10 minutes
Chicken thighs, 1-2 inch cubes, flattened- 400 grams (Skewered)
Dry Oregano- 2 Tablespoons
Lemon juice- 3 Tablespoons
Olive oil- 1/4 Cup
Salt- 4 Teaspoons
Pepper- 1 1/2 Tablespoons
Garlic, Smashed- 2 Tablespoons
Rosemary- 2 Teaspoons
Cumin- 1 Teaspoon
Dry Garlic (Optional)- 2 Tablespoons
Thyme, Chopped (Optional)- 1 Tablespoon
Mix all of the above ingredients in a shallow bowl. Cover with a plastic wrap for an hour or up to 12 hours. Heat a grill pan. Brush some oil, and let it start to smoke. Add the chicken skewers and fry until golden brown on both sides and is just cooked through, approximately 2 minutes on each side. Serve with pita bread and tzatziki.
