Sticky Rice With Mango and Coconut

I don’t know when I grew fond of this dessert, but there was a time when I did not like it. Not I love it, and with my coconut caramel sauce, you’ll love it too, if you don’t already. I always thought of rice as savoury and could never understand cooked rice that we normally eat with curries to be a part of something sweet. I guess, started liking it when I tasted it cohesively with mango ice cream, fresh mangoes and mango jelly. I did not bother making ice cream, mainly because I did not have the patience for it. So I simply went and bought fresh mango ice cream, and found tender coconut ice cream, so got some of that too.

The recipe is very easy. The Thai glutinous rice is soaked for an hour in water and cooked on medium heat with the same soaking water. The water contains a lot of starch which makes the rice sticky.

 

Once cooked, a mixture of coconut milk and sugar is added to this to familiarize the rice with the dessert. it is covered and left to cool to room temperature while soaking up the coconut milk.

 

Serve with some Coconut caramel sauce. Some additional accompaniments that I love to use are Mango Jelly, Mango ice cream, and Tender coconut ice cream. You can use one or all of them, but I strongly recommend mango ice cream.

Recipe:
Serves- 3

Thai glutinous rice- 1/2 Cup
Water- 1 1/2 Cup + 1/2 Cup
Coconut milk powder- 1 Tablespoon
Sugar- 1 Tablespoon

To Serve: (Choice of one or more of them. Or all )
Mango Ice cream
Coconut ice cream
Mango Jelly
Coconut caramel sauce

Soak the rice in 1 1/2 cups of water for 1 hour. Do not discard the water. Cook it on medium heat in the same water till all of the water is absorbed.

Mix coconut milk powder and 1/2 cup of warm water and sugar. Add this to the cooked rice. Cover it and let it come to room temperature and absorb all of the coconut milk.

Serve with some Coconut caramel sauce. Some additional accompaniments that I love to use are Mango Jelly, Mango ice cream, and Tender coconut ice cream. You can use one or all of them, but I strongly recommend mango ice cream.
