Crispy Herb Grilled Prawns with Garlic Pasta

I have been making a lot of easy recipes lately. It is summer and it is really really hot outside. It is very difficult to stay in the kitchen for a long time to cook. And then washing up the dishes and cleaning the kitchen after cooking in the heat becomes a task that sometimes seems unachievable. This recipe is one of those weeknight 25-minute meals. It’s really delicious, I mean its Crispy prawn and pasta. The prawns are not deep fried, which makes it a healthier option. It’s definitely not a diet meal, but it’s healthier than deep frying. The pasta is my take on an Aglio Olio. I have used linguine because I like linguine more than spaghetti. This dish is a simple, easy meal and celebrates prawn and olive oil.

The pasta and the prawns are cooked separately. For the prawns, mix the prawns in all with all the ingredients. Let it sit for 10- 15 minutes while the oven preheats. Lay the prawns in a single layer making sure every prawn has some bread crumbs on top of it. Grill for 15 minutes in the oven.


For the pasta, cook the pasta according to the instructions given. Reserve 1/4 cup of the pasta water and drain the remaining water. While the pasta is cooking, in a separate saucepan, add some olive oil, butter, garlic, chili flakes, and oregano. Let it cook on low heat till the garlic starts to brown, add in the cooked pasta, the pasta water, and stir, coating the pasta evenly with the olive oil mixture. Squeeze lemon juice over it.


Serve the pasta with the grilled prawns on top.



Serves – 3
Total time- 40 minutes

Crispy grilled prawns:
Prawns- 250 Grams
Garlic- 5 Cloves, smashed
Lemon juice- 3 Teaspoons
Olive oil- 2 Tablespoons
Chilli Flakes- 2 Tablespoons
Rosemary (Optional)- 2 Teaspoons, Chopped
White wine vinegar- 2 Teaspoons
Frecrumbsead crumbs- 3/4 Cup
Salt- 1 Teaspoon

Aglio Olio:
Pasta- 300 Grams, dry
Garlic- 12 Cloves, sliced
Oregano- 2 Tablespoons
Lemon juice- 1 Tablespoon
Butter- 1 Tablespoon
Olive oil- 2 Tablespoons
Chilli Flakes- 2 Tablespoons
Salt- To taste

For the prawns, in a mixing bowl, add all the ingredients including the bread crumbs and the prawns and mix well. Let it sit at room temperature. Preheat the oven to 210 Degrees C. Lay the prawns in a single layer on a baking sheet. Ensure there are some breadcrumbs on top of each prawn. Grill for 15-18 minutes.

While the Prawns are grilling, make the pasta. Cook the pasta according to the instructions on the package. Reserve 1/4 cup of the pasta water and discard the rest. In a saucepan, add the butter, olive oil, oregano, chili flakes, and garlic. Once the garlic starts to change colour, add the pasta, the reserved pasta water and mix well. Squeeze lemon juice on top and serve with the crispy grilled prawns.
