Chicken Souvlaki​ Pita Wraps

These pita wraps are really easy to make, You can use store-bought or homemade pitas. The chicken souvlaki kebabs are juicy and caramelized when they’re grilled because the marinade helps to keep the meat tender. Use chicken thighs for extra tenderness. The pitas are a meal on its own with the Tzatziki. The whole combination is perfect for any hot summer day, with the freshness from the tangy yogurt spread, the juice chicken, grilled to perfection and the pitas keeping you full and energized all day long.  It also makes a great party snack, just make the portions smaller.



Pita Bread (Homemade or store bought)- 1 Batch (6 if store-bought)
Tatziki- 1 Batch
Chicken Souvlaki- 1 Batch
Cherry Tomatoes- 1 Cup
Onions, Thinly sliced- 1 Cup
Spring onions- 1/4 Cup, chopped
Lemon- 1

Heat the pita bread on a pan or cover it in a kitchen towel and microwave for 30 seconds. The kitchen towel or tissue paper helps keep the moisture in the pita. Spread a few tablespoons of the Tzatziki on the pita, followed by the Chicken Kebabs. Top off with the onions, cherry tomatoes, and spring onions. Squeeze a little lemon juice on top. Serve.
